Thick and Chewy Oatmeal-Chocolate-Cranberry cookies

So this happened yesterday...
I had just finished posting the copycat-krispy-kreme-donuts recipe and oddly enough had a huge craving for oatmeal cookies... but not my usual outrageous oatmeal chocolate chip cookies... no sir. These had to be different, with an over-abundance of oats, chips and something different, like say, dried cranberries. oh melissa, you creative girl you. hah. ya right. 


If you are not the type of gal or guy who likes dried cranberries, feel free to just put chocolate chips in... or raisins, if you are that kind of person... i won't judge-- but the people you offer them to might. Raisins in cookies are a B I G  no-no for me...thoughts?

What you need:
1.5 C flour
1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 C margarine 
1/2C plus about 2tbsps white sugar. 
1/2C plus about 2 tbsps of brown sugar 
1 egg
1 and a 1/2 tsp. vanilla
1 1/4 C rolled 'quick' oats, or more if desired
1/2 C semisweet chocolate chips (or more if you like them very chocolaty)
1/2 C dried cranberries aka Craisins.  

What you need to do:

Preheat oven to 350. the pre-drink to all baking. 

step one:
In a medium mixing bowl, combine the flour, baking powder, baking soda and salt. Mix well and fluff it up a bit with either a fork or whisk. forks work just as well, and they can go in the dishwasher. just sayin'...

step two:
In a separate large mixing bowl, cream together the margarine and sugars. Add in the egg and vanilla; mix well until combined. 

step three:
Pour the dry ingredients (flour mixture) into the wet ingredients mixture. Gently mix until just combined. Gently fold in the oats. Then chocolate chips and dried cranberries

step four:
Take big balls of dough (like ping pong/golf ball sized) and drop them on a non-stick baking sheet.  Lightly press down the tops of them (a centimeter or so), just so they have a bit more opportunity to spread. 

step five:
Bake at 350 for 7 mins, then rotate the pan. Bake for another 5 mins or just until they get that nice light golden hue.  Of course if you like them more chewy than crispy, take them out sooner and let them set for a bit longer on the pan before removing them. We all know what a 'done' cookie looks like, right? Just make sure there's no raw dough, and you're in the clear!
