Banana Muffins are a fantastic way to enhance your curves. I'm not sure how many calories these
babies rack up per serving but I can only imagine it's huge, just like your
*ss after eating them. haha. I'm only jokingggg.
But that is why I said
they are Bootylicious.
Now that i've got your
attention, i'll let you know that they are worth every calorie, and contain
yogurt, which is healthy right?!?! Not to mention these are so stinking delicious!!! They have
a crisp muffin top that you can sink your teeth into (*ahem the only type
of muffin top you'll ever want anything to do with...) and the inside,
ohhh boyyy, is so soft, moist and tender, with just the perfect amount of
sweetness and bananananess. did i spell that right? yes!? good.
On top of their amazing
taste and texture, is the fact that they are super easy to make (i'm talking beginner level people) and especially
great if you have a couple of left over bananas that are turning brown,
'spotting' and icky. If you're anything like me, you are a prissy little
b*tch who won't eat a banana one day past it's yellow-phase-- see chart below:

Recipe yields 12 muffins
What you need:
1.5 C flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt (or a
little less)
1 C sugar
1/2 C [SCANT] vegetable
or canola oil --if you are NOT adding yogurt, then make it a normal 1/2C.
1 heaping tbsp vanilla
yogurt (optional- but i personally think it adds moistness and flavour)
1 large egg
1/2 tbsp. vanilla
2-3 overripe mashed bananas
--i usually just hold the peeled banana in my hand at step 4 and take a fork to chop it up, and then smush it in my hand, then drop it into the bowl.
Please make sure you have clean hands prior to this step. or not, i don't
really care.
optional 1/2 C chocolate
chips/nuts/ whatever you want to make you *ss even larger
What you need to do:
step one:
Preheat oven to 325
degrees. go ahead, do it now!
step two:
In a medium bowl,
whisk flour, baking soda, baking powder and salt.
as you can see, i use a fork to whisk because i'm kinnnd of lazy and it can go straight into the dishwasher. |
step three:
In a separate large
bowl, beat together sugar, egg, oil,
(optional) yogurt, and vanilla.
note how the red bowl is distinctly different than the blue bowl... keep the ingredients separate 'til later! |
step four:
Stir in the mashed
bananas.
step five:
Add dry ingredients to
wet, just until they are blended. no overmixing! Fold in optional extras like
chocolate chips or nuts. The batter will be thick!

step six:
Place 12 paper liners in
a muffin pan. Divide the batter evenly among the muffin cups. Bake on middle
rack until the tops are lightly golden brown, approximately 20-25 mins.
You can do the 'poke' test, by inserting a toothpick or fork into a muffin and
if it comes out wet or gooey you know it still needs time! Transfer to
cooling rack.
